To create the Rosae rice, Ebano rice has been gently shaved, removing its outer layer and producing this gorgeous lilac rice that is perfect for risottos. If acid is added to the rice while it cooks, lemon juice for example, it turns the most perfect shade of pink, hence the name! Ideal as a base for vegetables, meat or fish.
