The rich volcanic soil is full of minerals particularly suited to olive growing, and the high levels of polyphenols found in Tamia are a testimony to the quality of the olives produced there.\u003c\/p\u003e\n\u003cp\u003eThe \u003cstrong\u003e2025 \u003c\/strong\u003e\u003cb\u003eharvest \u003c\/b\u003eoil is so different to last years oil. We pick up herbaceous notes of spearmint, fennel and tarragon which leave a very pleasant (but not overpowering) long lasting bitterness.
