The Italian National Research Council have now recognised this olive and renamed it Dianora del Trebbio, for Clemente’s daughter, who is highly involved in the project.\u003c\/p\u003e\n\u003cp\u003eEach variety of olive is harvested early and cold pressed at their mill straight after picking. The resulting monovarietal oils are blended to create a peppery and intense, typically Tuscan, olive oil.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cspan style=\"color: rgb(0, 0, 0);\"\u003eStructured and bold, this oil begins with a sharp bitterness reminiscent of horseradish. It quickly softens into subtler notes of tea leaf and concludes with a surprising, creamy hint of vanilla.
